Insomnia Cookies was founded in 2003 by Seth Berkowitz, who started baking and delivering cookies from his dorm room at the University of Pennsylvania in Philadelphia. The chain now has hundreds of shops, many near college campuses, and is known for warm cookies delivered late into the night, often until 3 a.m.
